Pizza

Ingredients:
  • 1pkg. active dry yeast;
  • 1 1/4 cups warm water 40 degree C to 46 degree C (105F to 115F);
  • 3 1/4 cups Bread Flour;
  • 1 tsp. salt;
  • 1tbsp. Extra Virgin Olive Oil.
Dissolve yeast in warm water in large bowl; set aside.
Combine bread flour and salt. Add to the yeast mixture, and stir well. Add olive oil, and stir about 3 minutes, or until a smooth dough forms. Form into a ball; place in an oil-coated bowl, turning to cover surface. Cover with clean, damp, lint-free towel. Let rise in a warm place for 1 hour or until doubled in size.
Punch down dough, and divide into two equal portions. Cover with clean, damp, lint-free towel, and let dough rest 10 minutes.
Press into two 30.48 cm (12 in) pizza pans. Cover, and let rise in warm place about 20 minutes.
Heat oven 218 degree C (425F).
Top with chicken, green peppers, mushrooms, tomatoes, green and black olives, (beef, tomatoes, mushrooms, and anaheim peppers for Mexican Style pizza). All toppings have to be cut into small pieces.
Bake for 25 to 30 minutes, or until lightly browned. Add cheese, and bake until cheese begins to melt, about 5 minutes.

This recipe makes 16 servings. Bon Appetite!

Sauce

This sauce is ideal for beef, chicken, shrimp and fish. If sauce is used for fish can be added dill and make it less spicy. If sauce is for beef, chicken or for shrimp can be added parsley or not if you just want a simple sauce and can make it spicy how much you'd like.

Sauce Ingredients: Pure and Natural Soy Sauce, Pure Tomato Paste, Iodized Salt, Fresh Lemon Juice, Water, Crushed Red Pepper, Pure Grapeseed Oil.

Lentil Plov

For Plov:

Lentil 150gr
Rice 500gr
Olive Oil 6tbsp
Salt 2tbsp
Turmeric 1tsp
Cinnamon 1tsp
Sour Cream 1tbsp
Water.

For Sauce (Gara):

Beef
Rosemary 1/2bunch
Crushed Dried Mint 1/2tsp
Dried Lime 2pcs
Tomato Paste 1tsp
Iodized Salt 1tsp
Ground Black Pepper 1/2tsp
Onion 1/2pcs
Green Bell Pepper 1pcs
Laurel Leaves 3pcs
Soy Sauce 2tsp.


Chicken & Vermicelli Soup

  • Vermicelli 150gr
  • Golden Prune 4pcs
  • Chicken Wings 6pcs
  • Carrot 2pcs
  • Crushed Dried Mint 2tsp
  • Vidalia Onion 1/2pcs
  • Garlic 3cloves
  • Green Pepper 1pcs
  • Salt 2tsp
  • Red Crushed Pepper Spicy 1/2tsp
  • Olive Oil 3tbsp
  • Water as much as you wish for your soup to be more juicy or thick.
Preparing this soup is easy and healthy for our body especially in cold weather like autumn and winter.

What you need for this soup is just wash all the ingredients and cut them into small pieces except chicken wings and prunes. Let all vegetables be steamed for a 15 minutes in oil, then add water, chicken wings, golden prune, salt, pepper and let it boil untill chicken will be cooked, then add vermicelli and crushed dried mint and let it boil 10 minutes, then take it off stove.

New York Cheesecake

Preparation Time: 15minutes
Total Time: 5hours 25 minutes (including refrigerating)
Makes: 16servings

Ingredients:

20 cookies, finely crushed (about 2-1/4cups)
3tbsp butter melted
5packages (8 oz. each) Philadelphia Cream Cheese, softened
1 cup sugar
3tbsp flour
1tbsp vanilla
1 cup sour cream
4 eggs
1 can (21oz) cherry pie

Heat oven to 325 degree F.

Line 13x9 inch pan with foil, with ends of foil extending over sides. Mix crumbs and butter, press onto bottom of pan.

Beat cream cheese, sugar, flour, vanilla with mixer until well blended. Add sour cream and mix well. Add eggs, 1 at a time, mixing on low speed after each just until blended. Pour over crust.

Bake 40 minutes or until centre is almost set. Cool completely. Refrigerate 4 hours. Top with pie filling. Use foil handles to lift cheesecake from pan before cutting to serve.

Azeri Shepherd Salad

    This salad one of my favorites and I like it in any season and anytime with my main course food or separately with fresh baked bread or with dried rusk, but not sweetened. It's full of vitamins, digestive friendly and healthy salad. According to my knowledge, I can say that it was called "Shepherd Salad" because it's easy, takes less time and cost less for preparing, as all vegetables are chopped.
    I improved this salad a bit for taste of my husband and depends on the food. So I make it with two different ways.

                              Ingredients for Original Shepherd Salad:

  •  Fresh Cucumber;
  • Fresh Tomato;
  • Fresh Green Pepper;
  • Fresh Green Hot Pepper;
  • Fresh Vidalia Onion or Spring Onion;
  • Coriander/Cilantro;
  • Basil;
  • Salt.
    Just need to wash vegetables thoroughly, and cut them into medium pieces, add its salt, mix and it is ready to eat.

Ingredients of My Improved Shepherd Salad:
  • Fresh Cucumber;
  • Fresh Tomato;
  • Fresh Green Pepper;
  • Fresh Green Hot Pepper;
  • Fresh Vidalia Onion or Spring Onion;
  • Fresh Lettuce;
  • Coriander/Cilantro;
  • Parsley;
  • Fennel/Dill;
  • Basil;
  • Salt;
  • Grapeseed Oil.
    Here you've to wash all vegetables thoroughly again and cut them into small pieces, add its salt and mix. After mixing it add its oil and keep in refrigerator for 15-20 minutes and you can serve it.

    One more secret of this salad: You can add any of vegetables from recipe more or less for your taste and because of this I don't write how many cucumbers, tomatoes and etc. is necessary for making this salad. Enjoy your meal and be always healthy!!!

Fur Coat Salad

Fur Coat Salad is very healthy in every season and especially, in the summer when we want to loose our extra weight, but same time stay healthy .

Ingredients:

Beet root 3pcs;
Carrot 5pcs;
Potato 2pcs;
Egg 4pcs;
Sour Cream as much needed;
Fennel 1 bunch;
Smoked Herring 1pcs;
Salt;
Black Ground Pepper.

For Designing:

Radishes 1/2 bunch;
Parsley 1/2 bunch.

All ingredients has to be cut into small and same size shape. Beets, carrots, potatoes, eggs have to boiled and cooked well, but keep their shape, then all ingredients have to be cool down. Take any flat big plate and start from herring to make one layer, then with order potato, fennel, carrot, salt, pepper, beets, sour cream, then continue with same order until finish all your vegetables and on top cover with additional sour cream . For desining cut cleaned and washed radishes into circle shape and design around salad. Cut parsley in mid size and design top of salad.

Keep it in refrigerator about 2 hours, then serve.

Dolma with Grape Leaves

   Dolma With 
            &
  Without Sauce


















    Dolma is Azerbaijan national food, you can cook it in any season, but mostly spring, summer and autumn with fresh leaves, but winter with canned leaves. We have a 3 kinds of  Dolma, and here is one of them.

For Dolma we need:

- 1pcs Vidalia or Red Onion;
- 1 bunch of Fennel;
- 2lb/1kg Canned or Fresh Grape Leaves;
- 1/2lb/250gr Rice;
-1lb/500gr Ground Beef;
-1/2lb/300gr Ground Lamb Meat;
- Salt;
- Olive Oil;
- Black Ground Pepper for Taste.

For Sauce:

- 3 cloves of Garlic;
- 1/2lb/300gr Yogurt;
- Salt.

Dolma's ingredients has to be cut into small pieces and mix with ground meat, and add its salt and pepper. Grape leaves has to cook separately 5 minutes. After everything is ready need to fill each grape leaves with ingredients and wrap them in the shape of fat pen, but short and accurately, after arrange them inside pot, then add approximately 300gr water and olive oil, and cook it in low temperature on stove.

For sauce garlic need to squash and mix with salt and yogurt.

Capital Salad

My dear readers,

Capital salad actually is Russian salad, but some years before Azeris began to make it too, but they'd changed few ingredients to make it more delicious and healthy for all seasons.

Ingredients:

- Fresh Cucumber 6pcs;
- Pickled Cucumber 5pcs;
- Canned Green Peas 300gr;
- Potato 2pcs, but if its big only 1pcs;
- Carrot 6pcs;
- Fennel 1 bunch;
- Spring Onion 1bunch or Vidalia Onion 1pcs;
- Egg 5pcs;
- Chicken (breast meat only) aprx:2 full breast without bone and skinless;
- Sour Cream 1.5lb/680gr;
- Yogurt 1/2lb/200gr (just who wish to make it lighter and juice a bit);
- Salt;
- Black Ground Pepper.

All ingredients has to be cut into same small shape and size. Only carrot, potato, egg and chicken has to be boiled and cooked well but with one condition that vegetables not to get mashed. When cooked vegetables are ready take it out of water, and let it get cold then mix all cut ingredients and add salt, pepper, sour cream and yogurt. Food has stay in refrigerator 5-6 hours before serving, then enjoy your tasty, healthy salad with your family or with your friends!

AzerIra Soup

It was night and I'd decided to prepare lunch for next day for my husband. While I'm preparing lunch I saw in storage container some remain parts of vegetables, which was washed and cut before, but wasn't used for food as they were less, and I decided to use them to make a soup for dinner and I created this soup.



- Oat (100gr);

- Yellow Split Peas (50gr);

- Potato (1pcs);

- Chicken Wings (2pcs);

- Onion(1pcs);

- Garlic (2teeth);

- Vine Tomatoes (3pcs);

- Carrot (1pcs);

- Egg (1pcs);

- Coriander (how much you wish);

- Sweet Red Pepper (1/2pcs);

- Salt (1tbs);

- Red Pepper Powder (hot (1ts));

- Olive Oil (2 tbs);

- Dried Lime (2pcs);

- Laurel/Bay Leaves (1 leaf).



I just cut ingredients into small pieces except chicken wings and added water, then boiled it until fully cooked, then added coriander.



This portion is for 4 persons. Bon Appetite! How we say in Azeri "Nush Olsun!" or in Farsi "Nushe Jan!".

Fried Duck Giblets with Potato









Necessary Ingredients:

- Duck gizard (2lb/1kg);
- Duck heart (2lb/1kg);
- Idaho potatoes (2lb/1kg);
- Canola oil;
- Salt;
- Black ground pepper.

First need to clean and wash gizard, heart and potato, then add salt on it and mix and leave it for a while until its water gone, after that add canola oil to fried pan and fry them by shift first gizard and heart, then potatoes. When finishing frying mix all of them and add black ground pepper on it and its ready to serve.

Green & Red Salad

It is delicious and healthy salad. You've to try it!

Ingredients:

- Lettuce (1 bunch);
- Grape tomatoes (1/2lb);
- Pickled cucumber (5pcs);
- Spring onion (1/2 bunch);
- Pure grape seed oil (2tbs);
- Fresh cucumber (1/2lb);
- Salt;
- Black grounded pepper;
- Any kind of crisps bread.

Suyugh (Boiled and Steamed Greens with Rice)

Everybody knows that greens are very healthy, but some people can't eat just row greens and here is secret of healthy and delicious food, which came from our ancestors!!!

Dear ladies, if you want your skin always smooth, shining and brighten, so don't miss it and read carefully!

Suyugh is an Azeri food made of several kind of greens and rice. It's easy to prepare, to cook and it meets everybody's taste. In Azerbaijan they cook this food mostly spring and autumn seasons, because our body in these seasons need more vitamins. Here is recipe:

For Sauce:

4 cloves of garlic;
300 gr yogurt;
Salt.

For Food:

1 bunch spinach;
1 bunch spring onion;
2 bunches dill;
2 bunches coriander;
1 bunch mint;
1 bunch parsley;
1 cup rice (200 gr);
100 gr olive oil;
Salt & Black pepper.

All greens have to be cleaned and washed, then cut same size in small pieces. Add olive oil to pot, then one cup of water and add washed rice. Let it be boiled in 5 minutes, then add all cut greens, salt and black pepper for taste. It has to be cooked in 20 minutes.

Separately, we make sauce in one plastic bowl. Squash garlics with salt, then add yogurt and some water and mix it very well. Keep it in refrigerator 30 minutes before serving.

Serve Suyugh to shallow plate and add sauce on the top with rounded motion and enjoy your meal!
